FG/BASE

 

Base Table for TAPlus Texture Analyser

The base table is used for sample testing and for attaching selected fixtures to the TAPlus texture analyser. It ensures precision alignment of both product samples and fixtures.

The base table has two removable inserts; one blank and the other with a central locator hole. The blank insert provides a flat and solid base for positioning samples for testing. The insert with locator hole can be used for mounting various test fixtures such as the FG/BEC back extrusion food cell and the FB/VBS Volodkevitch bite set.

The insert can also be removed and the table used with other fixtures including the FG/KSC Kramer shear cell and the Bratzler shear blade set, which locate in the cut-out section (without an insert plate). These fixtures are secured using two thumbscrews to ensure accurate central positioning.

Packaging
Includes table and removable inserts. The base table is supplied as standard with the TAPlus texture analyser but may also be ordered separately.

Applications
Used in combination with the TAPlus texture analyser to provide a washable and solid surface for food texture analysis.

FG/BA Ball Probes

 

Two fundamental criteria for a good test are repeatability and resolution for comparision between results. In many cases, where sample hardness/softness is required, a ball probe can provide both repeatability and resolution. The principle of the ball probe is that uniform compression force is distributed at a normal angle to the surface area of the ball. This gives an averaging effect over the local area being tested.

Applications
Ball probes are invaluable for performing a wide variety of texture analysis tests. They are used in many applications where specimen hardness or softness is required.

They are ideal for testing fruit, vegetables and confectionery products. For specimens where the application requires the product to flow, for example cream cheese being squeezed from a tube, gels, pastes etc., it is possible to contain a sample in a container and penetrate the sample with the ball probe.

The principle of the cylindrical probe is that as the probe is forced into the sample, a shearing force action causes the sample to deform or rupture. This produces a curve showing load resulting from deformation.

Applications
Cylindrical probes have traditionally been used as general purpose compression probes for a wide range of applications. They are commonly used for applying a deformation to a gel structure to determine gel strength and elasticity.

Cylinder probes are also useful for applying a shearing force to a gel to determine its breaking strength and elasticity. Many standards quote cylindrical probes for gel testing. The Bloom value is a recognised standard for quoting the strength of a gel structure, particularly gelatine.

Kramer Type Shear Cell

Ottawa Forward Extrusion Cell - FG/FEC

 

The jig consists of a plunger and a square test cell with solid walls and an open base, which can be fitted with one of two supplied plates.

The test involves weighing an appropriate quantity of the sample and placing it in the cell fitted with either a slotted or perforated plate. In either case, the result is determined by measuring the force required to extrude the sample.

This fixture is designed to imitate incisor teeth shearing through a food specimen. The set comprises upper and lower "teeth", which are brought together during the test until almost touching. Spaghetti and Pasta Compression Fixture

 

This Spaghetti and Pasta Compression Fixture was custom designed for one of Italy's best-known manufacturers of traditionally made high quality 100% durum wheat pasta. The company wanted a test fixture to evaluate various textural properties of cooked spaghetti under compression, simulating human bite and mouth-feel.
Used in conjunction with a Lloyd Instruments test machine and data analysis/applications software, the fixture was designed to compress a small sample of pasta between two circular compression platens and to measure the thickness at two specified loads. The jig uses the compression plates as a load for compression. Thickness measurements are taken before and after the test to measure the recovery of the sample and to determine if it is a good or bad batch.

The fixture consists of a fixed lower compression platen and a top compression platen attached to the base of a vertical rod which is driven up or down by the system. The effective weight of the top plate assembly is reduced to 15 g using a counterweight, which is attached via a toothed belt. This belt is suspended over two pulleys, one of which is attached to a high resolution encoder. When the top compression plate moves, the encoder rotates to measure the postion of the top compression platen.
